Carotenoids In Foods

Carotenoids are fat-soluble pigments found principally in plants, algae, and photosynthetic bacteria. They play a critical role in the biological process known as photosynthesis. They are responsible for over 600 richly colored molecules which are the red, orange, and yellow hues of plant leaves, fruits, vegetables and flowers.

Natures colors identify the carotenoids and that tells us where the super dense nutrients can be found to provide us with the foods for our optimal health. Examples of these plant colors are carrots and oranges, the reds of peppers and tomatoes, and the pinks of flamingo’s and salmon. The brighter and darker the colors the more dense are the nutrients.

The most common types of diet carotenoids are alpha-carotene, beta-carotene, beta-cryptoxanthin, lutein, zeaxanthin, and lycopene. Alpha-carotene, beta-carotene and beta-cryptoxanthin are provitamin A carotenoids, meaning they can be converted by the body to retinol carotene and xanthophylls. An example: carrots are carotenes and marigold petals are xanthophyll’s. Scientists must stay awake nights thinking of all these different names.

All of the foods with color are powerful antioxidants. Research coming out every day now shows that you can reverse heart and circulatory disease with diet alone if you catch it at the early stages. Doctors believe that arteries are still effective without problems or symptoms if your arteries are below 50% clogged.

Most everyone over the age of 30 has some degree of vessel blockage. If you have been a vegetarian all your adult life you probably have very little. But 86% of all of use are not vegetarians. Further we eat a diet full of fat, process food and sugar and American children are well known for not liking or eating vegetables.

Carotenoids are an important part of any eating program. It must become a way of life if you want to decrease your chances of major disease.
